Guilty Pleasure

I start with shallots, Arborio rice,
and garlic, sautéed in olive oil;
add just a splash of crisp white wine,
mushrooms, mascarpone cheese,
broth, butter, parmesan,
a hint of pepper,
a dash of salt.
Risotto.
Perfect.
Yum.
